Applying for food benefits after losing my job - what worked for you?

I got a notice asking for proof of income and I am unsure what to send. I am in Wichita, in case local advice matters. I have a final pay stub, a termination letter and my unemployment approval. What did you submit and how long did approval take?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 3 weeks, and my county offered an interview by phone.
