Applying for food benefits after losing my job (update)

I lost my job as an insurance claims processor and my household is applying for SNAP for the first time. There are 7 people counting on me, so I am trying to be careful. The caseworker asked for bank statements too. Is there an expedited option for people with very little income?

Keep everything in writing and save the confirmation numbers. It saved me later.

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 16 weeks, and my county offered an interview by phone.
