Applying for food benefits after losing my job - first time posting

I got a notice asking for proof of income and I am unsure what to send. I would rather hear the honest version than the polite one. There are 5 people in my household. Is there an expedited option for people with very little income?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 15 weeks, and my county offered an interview by phone.
