Applying for food benefits after losing my job

I got a notice asking for proof of income and I am unsure what to send. This is my first time dealing with any of this. The caseworker asked for bank statements too. Is there an expedited option for people with very little income?

Thanks for writing this out. I went through something close to it last year, and it settled down once I kept a simple log of every call and form.
