Applying for food benefits after losing my job after 14 years as a customer-service rep

I got a notice asking for proof of income and I am unsure what to send. I do not usually post, so bear with me. I have a final pay stub, a termination letter and my unemployment approval. Is there an expedited option for people with very little income?
