Applying for food benefits after losing my job after 13 years as an accounts payable clerk

I lost my job as an accounts payable clerk and my household is applying for SNAP for the first time. I am in Knoxville, in case local advice matters. The caseworker asked for bank statements too. Is there an expedited option for people with very little income?
