Applying for food benefits after losing my job - 7 months and counting

I got a notice asking for proof of income and I am unsure what to send. I worked as a medical assistant before this. The caseworker asked for bank statements too. Is there an expedited option for people with very little income?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 22 weeks, and my county offered an interview by phone.
