Applying for food benefits after losing my job - 4 months and counting

I got a notice asking for proof of income and I am unsure what to send. This is my first time dealing with any of this. I have a final pay stub, a termination letter and my unemployment approval.

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 23 weeks, and my county offered an interview by phone.
